Washington, D.C. has no shortage of ambitious restaurants, and modern Indian dining has become one of its more closely watched categories. At Tamashaa, a modern Indian restaurant and cocktail bar in the capital, Chef Manoj Kumar has led back-of-house operations since July 2023 as Sous Chef.
The brief is a delicate one: blend traditional Indian cooking with a contemporary, upscale approach that elevates the restaurant's culinary positioning. It is a balance many restaurants attempt and fewer sustain. Lean too far into modernity and the food loses the flavours guests came for. Stay too traditional and the restaurant risks looking dated in a city where diners have plenty of choice.
Holding that balance is a daily discipline and not a one-time menu decision, and much of it comes down to operations. In his time at Tamashaa, he has streamlined kitchen workflows, prep schedules and team communication. The effect has been visible in ticket times and plating consistency during high-volume weekend service, when the kitchen is under its greatest pressure. A full dining room, a bar producing at pace and a long ticket rail leave no room for a slow or uneven plate.
Prep schedules decide whether a line starts service ready or already behind. Communication decides whether the kitchen and the floor stay in step. Improvements in both tend to show up in small ways, such as tickets that move faster and plates that look the same from the first table to the last, but they are what guests experience as a smooth evening.
He also recruits, trains and mentors a diverse kitchen team while keeping strict compliance with D.C. health and safety regulations. Leading a multicultural team in a regulated American market draws on the same skills he built in Delhi, London and Portugal, adapted again to a new set of rules and expectations.
In September 2026, he was named an Official Executive Member of the World Association of Master Chefs (WAMC), a recognition associated with his work at Tamashaa. For a chef whose career began at the commis level in a Delhi hotel, it marks a notable moment in a long professional arc.
